Oil, water, salt, baking soda and flour. There is nothing else.. I would say your Chuys is breaking corporate rules if they’re frying with meat, not sure what fired meat they even have? Then either:
A) You had a server who was clueless.
B) You have a Chuy’s that doesn’t follow corporate guidelines.

As you can see in this post there is a vegan vegetarian menu from corporate that lists both rices as vegan. That menu is also available in each Chuy’s location. Just ask for it.

I know 4 employees at the Chuy’s here. One is the kitchen manager. Both rices are vegan. No butter. It is even included on the vegan menu from corporate.

I received the same response I have always received as well as another veg menu.

The response:

Thanks for writing in. We offer items that do not contain animal products, however all items are prepared on surfaces where traces of animal products can be found. Therefore we no longer feel comfortable passing the attached menu out at the stores, but I’ve gone ahead and attached it so you can at least get an idea of which items are vegan.

Please keep in mind, you can always talk to the manager on duty about any questions or concerns you might have.

So, as always there are vegan options which are the same as I have listed but, as with any omni restaurant, cross-contamination is a possibility.

The knife used to slice your lettuce likely sliced a chicken breast prior.

It’s always better to eat at home.

Also, I have been shown exactly what is added to the beans and rice at my local Chuy’s location and it is nothing more than vegetable oil. No whey. No margarine.

Thanks for writing. After talking to a few of our operations people, we’ve come up with a couple options for you. After seeing the limited amount of choices, we are considering other alternatives and vegan friendly ways of preparing our vegetarian dishes. For now, we have the following things available:

Chips, Salsa, Tortillas
Dinner Salad with Cilantro Vinaigrette dressing
Guacamole Taco w/o cheese
